On a hill close to his Bordeaux-centric concept, Calais Winery, is proud Frenchman Ben Calais’ other more collaborative effort. Whereas high-elevation cabernet sauvignon and merlot are the focal point at his earlier venture (planted, fittingly, with a French flag smack dab at the winery’s gate), lighter Rhône varieties dominate here, with varieties like viognier and roussanne, all available for on-site consumption along with Bayonne ham, Comté cheese, and other French charcuterie.
